This Variety of cauliflower was the result of years of classical breeding in Denmark after the discovery of a mutant plant in the eighties.
The Purple color is a result of the formation of anthocyanins found also in red cabbages and red wine, according to the Danish Institute of agricultural sciences, Purple Cauliflower contains 200 times more anthocyanin than a normal cauliflower exhibiting “pinking” but with exactly the same substances.
